Caramel Popcorn

Cutting back on processed food and trying to save money by making foods from scratch as much as possible.

8-10 cups of popped pop corn (plain, no butter or salt added)
**set that off to the side in a really big bowl or use a brown paper grocery bag.

**Preheat oven to 250ºF and get two baking sheets lined with parchment ready to use

In a large pot add:
1 cup butter
1 cup brown sugar
1/4 cup corn syrup
1/2 teaspoon salt
**cook over medium heat, stir frequently and bring to a low boil
**once boiling turnoff the heat and add:
1 1/2 teaspoons vanilla extract
**stir
1 teaspoon baking soda (this will make it puff up a bit)
**stir well, then pour over the popcorn
**Mix the popcorn to get fully coated
**Spread half of the mixture on each baking sheet and bake for 10 minutes at 250ºF
**Stir the caramel corn, don't worry if some of the caramel has pooled around the corn, you will just mix it and the caramel sauce will coat the popcorn again
**Place back in the oven for 10 more minutes, then remix one last time and let the popcorn cool
**Once cool, break apart and place in covered containers, or bags until you are ready to serve.
