Baked Chicken Thighs is simple and comfy dish that’s so convenient for a weeknight meal. It has tender juicy chicken thighs baked in a flavorful, tangy tomato sauce. And it’s satisfying and delicious served over some fluffy rice!

Baked Chicken Thighs

Ingredients
5 tablespoons olive oil, plus more for drizzling
5 tablespoons tomato paste
Juice and zest of 1 lemon
5 garlic cloves, minced
1 1/2 teaspoons smoked paprika
1 onion, sliced
6-8 bone in chicken thighs, skin removed
2 Roma tomatoes, diced

Directions
Preheat oven to 425°.
Combine olive oil, tomato paste, lemon juice, lemon zest, garlic cloves, and paprika in a bowl.
Spread onions onto the bottom of a 9 x 13“ baking dish. Drizzle with a little bit of olive oil and season with salt and pepper.
Place chicken thighs on top season both sides with salt and pepper.
Sprinkle tomatoes all around the perimeter of the dish. Drizzle with a little bit of olive oil and season with salt and pepper.
Spread tomato mixture over the top of the chicken.
Bake for 40 minutes. Serve over rice if desired.
