Quick & Easy No-Bake Almond Joy Bites:

Ingredients:
1 cup shredded coconut (unsweetened)
1/4 cup almond butter
1/4 cup honey or maple syrup
1/4 cup dark chocolate chips (or semi-sweet)
1/2 tsp vanilla extract
1/4 cup chopped almonds
Pinch of sea salt
Instructions:
Mix the Base: In a medium bowl, combine the shredded coconut, almond butter, honey (or maple syrup), vanilla extract, and sea salt. Stir until the mixture is well combined.

Add Almonds: Fold in the chopped almonds to give the bites that classic "Almond Joy" crunch.

Shape the Bites: Roll the mixture into small, bite-sized balls using your hands. If it's too sticky, you can chill the mixture for 10-15 minutes to firm up before rolling.

Melt Chocolate: In a microwave-safe bowl, melt the chocolate chips in 15-second intervals, stirring in between, until fully melted.

Coat the Bites: Dip or drizzle the energy bites with the melted chocolate. You can coat them entirely or just add a drizzle on top for a lighter touch.

Chill: Place the bites in the fridge for about 20 minutes, or until the chocolate sets.

Store: Keep the bites in an airtight container in the fridge for up to a week.
