Tofu Couscous Salad

Ingredients (for two portions):

1/4 cup dry couscous (or fine bulgur)
1 red bell pepper, diced
1 orange bell pepper, diced
2 small tomatoes, diced
1/2 cucumber, chopped
3 green onions, finely chopped
A handful of fresh parsley, chopped
Juice of 1 lemon
2 tablespoons olive oil
150 grams fresh tofu, cubed
Celtic salt, to taste
Black pepper, to taste

Prepare the couscous/bulgur:

Place the couscous (or fine bulgur) in a bowl. Add 1/2 cup of boiling water, cover it, and let it sit for about 5-10 minutes until all the water is absorbed. Fluff with a fork.
Cut the vegetables and tofu:

Dice the red bell pepper, orange bell pepper, and tomatoes into cubes. Chop the cucumber and green onions. Cut the tofu into cubes.
Chop the parsley:

Finely chop the parsley.
Squeeze the lemon:

Squeeze the juice from 1 lemon.
Assemble the salad:

In a large bowl, combine the cooked couscous, diced vegetables, chopped cucumber, green onions, parsley, and tofu.
Add lemon juice and seasoning:

Pour the lemon juice and olive oil over the salad. Add Celtic salt and black pepper to taste.
Mix and serve:

Gently mix everything together until well combined.
