Apple Snack Cake

Cutting back on processed food and trying to save money by making foods from scratch as much as possible.

This cake is made with a boxed cake mix. I decided to make a homemade version of a cake mix.

Homemade White Cake Mix (makes two mixes)
5 cups flour
4 cups sugar that has been placed in a blender for 30 seconds to make the granules a bit smaller
1 cup buttermilk powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons baking powder
**Whisk well and divide into two. (about 5 cups per each) You will need one of the two mixes for the Apple Snack Cake below
--To make a white cake using one of the mixes add 1 1/4 cups water,
1/2 cup oil, 2 tsp. vanilla extract, 4 egg whites to the mix and blend well. Bake the cake at 350ºF in a 13x9 inch greased pan for 30-40 minutes
(can be made into two rounds or cupcakes just adjust the baking time)

Apple Snack Cake 350ºF. 35-55 minutes
-1 package cake mix (white or yellow cake)
-1 teaspoon cinnamon
-1 cup sour cream or plain greek yogurt
-3 eggs
-1/4 cup water
-1 teaspoon vanilla extract
**Mix well
**Pour into a greased 13x9 inch pan
-21 ounce can of apple pie filling (add by dollops to the top of the cake batter)
**Bake in a preheated 350ºF oven for 35-55 minutes, until a toothpick inserted in the center comes out clean
**Cool the cake and top with a thin frosting
Frosting: 2 Tablespoons of melted butter, 1 teaspoon vanilla extract, 1-2 Tablespoons milk, and 1-2 cups powdered sugar.
**Mix well and drizzle over the top of the cake. (this is not a regular frosting, it should be quite thin)
**Perfect for a snack or breakfast
