Cooking Okra Moroccan Style

Today we’re cooking a quick and delicious meal with the okra from our last farm box delivery. Plus, we have a tip for de-sliming the okra! Hope you enjoy!!

Moroccan Inspired Okra

1 pound Okra prepped - NOTE! Plan for a 2 hour wait!
Okra Prep
2 - 3 tsp salt
2 - 3 tsp Cider Vinegar
Cut tops off and toss okra in a bowl with salt and vinegar and coat thoroughly. Set aside and let stand for 2 HOURS.

1 Tbsp Oil
1 Onion sliced
2 cloves Garlic chopped
2 red Chilis deseeded and chopped
2 tsp Coriander seed
1 tsp Sugar
Juice of 1 Lemon
14 oz chopped Tomato
1/2 Preserved Lemon diced
Salt and Pepper to taste

Heat a large skillet over medium high heat. Add oil, then onion, garlic, chilis, coriander seed, and sugar. Cook for 3-5 minutes or until onions are translucent. Add prepped okra, lemon juice, and tomatoes. Cover and cook an additional 10 minutes. Remove from heat and let rest for 5 minutes. Toss with preserved lemon and salt and pepper to taste.

Saffron Rice
2 pinches of Saffron and 1/4 cup of water
1 cup brown rice
1 3/4 cup water

Boil 1/4 cup of water and remove from heat. Add saffron and steep for 5 minutes. Combine 1 cup brown rice, saffron water mixture, and remaining water in a medium pot. Bring to boil, reduce heat, simmer for 40 minutes. Remove from heat and add salt to taste.

Lentils
1 cup Lentils
2 cups of water
2 tsp Coriander seeds
2 tsp Cumin seeds

Combine all ingredients in a medium pot. Bring to boil, reduce heat, simmer for 20 minutes. Remove from heat and add salt to taste.
