Add the Tarkhineh and let it simmer for about 15-20 minutes until it softens.
Add the cooked chickpeas or lentils and chopped greens, cooking for an additional 10 minutes.
Season with salt, pepper, and dried mint.
Serve hot, optionally garnished with a drizzle of olive oil.
