The Tbikha is a traditional (vegan) Algerian garden vegetable stew that utilizes the freshest seasonal vegetables. Today, I'm preparing one version using sweet peas, fava beans and artichokes that is typical of the cuisine of the capital city of Algiers.
This delicious dish can be enjoyed with some freshly baked bread or as a side.

500g - about 1 lb shelled fresh sweet peas
about 4 cleaned artichoke hearts
500g - about 1 lb shelled fava beans
1 handful chopped cilantro/coriander (about ½ cup)
1 handful chopped parsley (about ½ cup)
4 cloves of garlic, minced
1 onion, chopped fine
1 pinch hot pepper (optional - I didn't use)
1 TBS tomato paste
1 TBS dersa (red pepper paste)
1/4 tsp paprika
A handful of rice ( about ½ cup - 125g dry)
salt / black or white pepper/ oil
water or stock

environ 4 cœurs d'artichauts nettoyés
500g de fèves décortiquées
1 poignée de coriandre hachée / coriandre (environ ½ tasse)
1 poignée de persil haché (environ ½ tasse)
4 gousses d'ail émincées
1 oignon, haché fin
1 pincée de piment (facultatif - je n'ai pas utilisé)
1 CS pâte de tomates
1 CS dersa (pâte de piment rouge)
1/4 cc de paprika
Une poignée de riz (environ ½ tasse - 125g sec)
sel / poivre noir / blanc / huile
d'eau ou bouillon
