Italian Spinach & Cheese Pie using Puff Pastry

A delicious Spinach and Cheese Pie encrusted in Puff pastry!
It's so easy and yummy!

1 package Puff Pastry sheets, thawed (500 gr or 1.1 Pound)
Sausage Spinach and Cheese Filling

1 to 1 1/2 Pounds bulk Italian Sausage, or Links with casings removed
1/2 Cup Diced Onion
1 Large Clove Garlic, minced
1/2 Tsp Crushed Red pepper, optional
1 Cup sliced Mushrooms
2 Cups Grated Mozzarella Cheese
2 Cups Ricotta Cheese
4 ounces Softened Cream Cheese
1/4 Tsp Black Pepper
2 Tsp Fennel Seeds, optional
2 slightly beaten eggs
10 ounce package frozen chopped Spinach, thawed & drained
