The Absolute Best Low Sodium Fried Green Tomatoes

If you are on a low-sodium diet there is no need to deprive yourself of some wonderful foods. Let me show you how to make these delicious low-sodium Fried Green Tomatoes. They'll be your favorite!

Lower Sodium Fried Green Tomatoes – 189 mg per serving.
4 servings- 4- 5 oz serving size
3 containers to hold mixtures, baking sheet with a rack and paper towels.
Measuring scale.
1 egg, lightly beaten
½ cup ap flour (DIVIDED)
½ Tablespoon lemon juice (or white distilled vinegar)
½ cup milk
½ cup cornmeal
½ teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
¾-1 teaspoon cayenne pepper
1 lb green tomatoes, cut into (1/2 inch slices)-
¼ teaspoon salt
Vegetable oil
Step 1
Make your buttermilk by mixing the ½ T lemon juice into ½ cup milk and set aside
for about 5- 10 minutes. (Lower sodium than store bought). When it looks like it
has curdled it is ready to use.
Mix the onion powder, garlic powder and cayenne pepper together in a small
container. Measure your tomato slices out to confirm how many will make 4- 5 oz
(depends on the size of your tomatoes)- this is important! Lay your slices out on a
cutting board or plate and sprinkle the seasoning mixture on both sides of the
tomato slices. I sometimes press spices into the tomato with my fingers. Set
aside.
Step 2
Combine ¼ cup all- purpose flour, cornmeal and pepper in one of the shallow
containers. Put the other ¼ cup flour in another shallow container.

Step 3
If your buttermilk is ready, take out 2 Tablespoons (if you are making the sauce),
mix your egg and buttermilk together in another shallow container. Lay all three
containers out for assembly.
Step 4
Pour oil to a depth of ¼ to ½ inch in large cast-iron skillet and heat (Flour test)
Working with one slice at a time dredge the tomato slice in the flour, dip in the
egg mixture and then in the cornmeal mixture.
Step 5
If your oil is ready, place the tomato slices in the oil without crowding. You want
a nice golden brown crust. Cook about 2 minutes per side. You may need to
adjust the temp if cooking too fast. Place each on the rack with paper towel
underneath. When you are done sprinkle the ¼ teaspoon salt on all of the slices,
distributing well.
Buttermilk Sauce - 2 Tablespoon serving size 43.25 mg sodium
2 Tbsp buttermilk
2 Tbsp mayonnaise
2 Tbsp sour cream
1 Tbsp fresh chopped dill
Whisk together and serve on top or on the side.
