High-Protein Banana Nut Bread

Ingredients:

3 ripe bananas (mashed)
2 large eggs
1/4 cup honey (or maple syrup)
1/4 cup Greek yogurt (plain or vanilla)
1/4 cup almond milk (or any milk of your choice)
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour (or all-purpose flour)
1/2 cup protein powder (vanilla or unflavored)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon (optional)
1/2 cup chopped walnuts (or any nuts of your choice)
1/4 cup dark chocolate chips (optional, for added sweetness)

Instructions:

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

In a large bowl, mash the ripe bananas until smooth. Add the eggs, honey, Greek yogurt, almond milk, and vanilla extract. Whisk until well combined.

In a separate bowl, mix together the flour, protein powder, baking soda, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Fold in the chopped walnuts and chocolate chips (if using), making sure they are evenly distributed throughout the batter.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it with aluminum foil during the last 15 minutes of baking.

Remove the bread from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Slice, serve, and enjoy your high-protein, sweet banana nut bread! Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.

Tips:

Boost the protein even more: Add an extra scoop of protein powder or swap out the chocolate chips for more nuts.
