Picking and Dehydrating Figs

This is our fourth time picking so far this year and so far we are averaging between 40-100 figs per day. Typically we eat the figs fresh and then freeze all that we want to store for the winter. A fresh fig depending on the quality will usually only last 3-7 days in the refrigerator before it starts to rot and they do not ripen any after you pick them. Also the reason you want to blanch the figs when dehydrating is because if you do not the skin will become leathery and tuff. We will keep you updated as the harvest season continues.
