Slow Cooker Sweet and Sour Pork Roast
Ingredients:
3-4 lb (1.3-1.8 kg) pork shoulder roast
1 cup (240 ml) pineapple juice
1/2 cup (120 ml) apple cider vinegar
1/2 cup (100 g) brown sugar
1/4 cup (60 ml) soy sauce
1/4 cup (60 ml) ketchup
2 tablespoons cornstarch
1 onion, chopped
1 bell pepper, chopped
1 cup (150 g) pineapple chunks
2 cloves garlic, minced
Salt and pepper, to taste
Instructions:
Prepare the Pork: Season the pork roast with salt and pepper. Optional: Sear the pork in a hot skillet with a bit of oil until browned on all sides. This step adds flavor but can be skipped.

Mix the Sauce: In a bowl, whisk together pineapple juice, apple cider vinegar, brown sugar, soy sauce, and ketchup. This will be your sweet and sour sauce.

Layer the Ingredients: Place the chopped onion, bell pepper, and garlic in the bottom of the slow cooker. Place the pork roast on top of the vegetables. Pour the sweet and sour sauce over the pork.

Slow Cook: Cover the slow cooker and cook on Low for 6-8 hours or High for 4-5 hours, until the pork is tender and easily shreddable.

Add Pineapple: About 30 minutes before serving, add the pineapple chunks to the slow cooker. If you want a thicker sauce, dissolve 2 tablespoons of cornstarch in 2 tablespoons of water and stir it into the sauce. Let it cook for the remaining 30 minutes.

Serve: Once the pork is cooked, shred it with two forks, mixing it with the sauce and vegetables. Serve over rice or noodles, garnished with green onions or sesame seeds if desired.
