Blackstone Breakfast Hack | Blackstone Griddles
Chef Nate’s breakfast frittata hack is a total game changer! Crispy bacon, a mix of eggs, cream, fresh tomatoes, and chives are cooked right in bell pepper rings. Stir in the bacon, sprinkle with parmesan, and you’ve got a breakfast that's as fun as it is tasty!

Ingredients
6-8 pieces thick-cut bacon
½ yellow onion, small diced
2-3 garlic cloves, minced
Blackstone Tuscan Herb Seasoning
2 cups baby spinach
4-6 eggs
3 tablespoons heavy cream
1 tomato, small diced
1/3 cup shredded white cheddar
1 tablespoon chopped chives
1 green bell pepper, cut into 1 ½ inch rings
1 red bell pepper, cut into 1 ½ inch rings
Sour cream for garnish
Salt and pepper
Directions
1. Heat your Blackstone griddle to medium heat and cook the bacon until crispy, about 8-10 minutes. Chop the cooked bacon and set aside.
2. In the remaining bacon fat, add the onions and garlic and cook for 3 minutes, stirring often.
3. Add the spinach and cook for another 2 minutes.
4. In a large mixing bowl, combine the eggs, cooked onions and spinach, tomatoes, shredded cheddar, chives, chopped bacon, Blackstone Tuscan Herb Seasoning, and a pinch of salt and pepper. Mix evenly.
5. Place the bell pepper rings in the bacon fat and fill them with the egg mixture. Cook for 2-3 minutes per side, covering with a dome.
6. Serve with a garnish of sour cream and chopped chives.
