### Leg of Lamb in an Underground Oven
#### Ingredients:
- 1 whole leg of lamb (about 4-6 lbs)
- Olive oil
- Salt and pepper
- Fresh herbs (such as rosemary, thyme, or oregano)
- Garlic cloves (4-6, smashed)
- Lemon (1, sliced)
- Vegetables (optional: onions, carrots, potatoes)
#### Instructions:
1. **Preparation**:
- Start by marinating the leg of lamb. Rub it with olive oil, salt, pepper, and your choice of fresh herbs. You can also insert garlic cloves into small cuts in the meat for extra flavor. Let it marinate in the refrigerator for a few hours or overnight if possible.
2. **Building the Oven**:
- Choose an appropriate location for your underground oven, away from flammable materials.
- Dig a hole about 3 feet deep and wide enough to accommodate the leg of lamb and any additional ingredients.
3. **Heating the Oven**:
- Gather some dry wood and heat it until it's reduced to glowing embers. You can use hard woods for better heat retention.
- Once the fire has burned down, spread the embers evenly in the bottom of the hole.
4. **Cooking the Lamb**:
- Place the marinated leg of lamb in a large cast-iron pot or wrap it in several layers of aluminum foil to protect it from direct heat and moisture.
- Place vegetable slices (like onions or potatoes) around the lamb if desired, adding flavor and making it a complete meal.
- Cover the pot or foil-wrapped lamb with hot coals, then shovel some dirt over the top to insulate the heat.
5. **Cooking Time**:
- Leave the lamb to cook for about 4-6 hours, depending on the size of the leg and the heat of the embers. The longer it cooks, the more tender it will be.
6. **Serving**:
- Carefully uncover the lamb and check for doneness. The meat should be tender and easily pull away from the bone.
- Serve the lamb with the roasted vegetables and any additional sides you prefer.
