Roast Dinner Meatloaf, combining the classic flavors of a roast dinner into a comforting meatloaf.

Ingredients:
For the Meatloaf:

1.5 pounds ground beef
0.5 pound ground pork
1 cup breadcrumbs
1/2 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:

1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
For the Roasted Vegetables:

4 large carrots, cut into chunks
4 large potatoes, cut into chunks
1 large onion, cut into wedges
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Instructions:
Preheat the Oven:

Preheat your oven to 375°F (190°C).
Prepare the Meatloaf Mixture:

In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, finely chopped onion, minced garlic, ketchup, Worcestershire sauce, Dijon mustard, dried thyme, dried rosemary, salt, and pepper.
Mix until well combined but do not overwork the meat mixture.
Shape and Place the Meatloaf:

Shape the meat mixture into a loaf and place it in the center of a large baking dish or on a lined baking sheet.
Prepare the Glaze:

In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard.
Brush half of the glaze over the meatloaf.
Prepare the Roasted Vegetables:

In a separate bowl, toss the carrots, potatoes, and onion wedges with olive oil, dried thyme, dried rosemary, salt, and pepper.
Arrange the vegetables around the meatloaf in the baking dish.
Bake:

Bake in the preheated oven for 45 minutes.
After 45 minutes, brush the remaining glaze over the meatloaf.
Continue baking for another 15-20 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F or 70°C) and the vegetables are tender.
Rest and Serve:

Let the meatloaf rest for about 10 minutes before slicing.
Serve the meatloaf slices with the roasted vegetables on the side.
