Grilled Marinated Chicken combined with Mexican Corn Salad is a fun & delicious meal to make this summer! The Grilled chicken is juicy and tender with savory and tangy flavors and the Mexican Street Corn Salad has all the traditional flavors of a Mexican Street corn!

Grilled Marinated Chicken

Ingredients
2 lbs chicken breast
1/3 cup olive oil
Juice and zest of 1 lemon
2 teaspoons smoked or regular paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 3/4 teaspoons salt
1 teaspoon pepper

Directions
Slice chicken in half lengthwise and place them into a bowl.
In another bowl combine the rest of the ingredients. Pour over chicken and mix well to combine. Let marinate for at least 4 hours or overnight.
Heat outdoor grill to medium high heat and cook chicken until cooked through, depending on the thickness about 5 minutes per side.
Optional - I like to drizzle the cooked chicken with a little bit of olive oil

Ingredients
Corn (fresh or frozen)
Mayo
Cotija cheese
Chopped cilantro
Chili powder
Lime wedges
Salt
Small plastic cups

Directions
Add ingredients to a small cup and stir to combine.
