Sweet Pork Ribs, Fried Fish Vermicelli, & 6 Healthy Food Nutritionist Recommends
Sweet Pork Ribs:
Ingredients:
2 to 3 pounds of pork ribs
2 teaspoons of salt
1 teaspoon of black pepper
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of paprika
Half a cup of brown sugar
Half a cup of ketchup
1/4 cup of soy sauce
2 tablespoons of apple cider vinegar
1 tablespoon of oyster sauce
1 teaspoon of mustard powder
1 teaspoon of dried thyme
Instructions:
1. Preheat oven to 325°F (165°C). Line a large baking sheet with aluminum foil.
2. Season the ribs with salt, pepper, garlic powder, onion powder, and paprika.
3. In a large saucepan, combine brown sugar, ketchup, soy sauce, apple cider vinegar, oyster sauce, mustard powder, and dried thyme. Cook over medium heat, stirring occasionally until the sugar has dissolved and the sauce has thickened about 10 minutes.
4. Place the seasoned ribs on the prepared baking sheet. Brush the sauce over the ribs.
5. Bake in the preheated oven for 2 to 2 1/2 hours, or until the meat is tender and has pulled away from the bones. Baste the ribs with the remaining sauce every 30 minutes.
6. Serve the ribs with extra sauce on the side, if desired.

Fried Fish Vermicelli:
Ingredients:
For the broth:
2 pounds white fish fillets
2 quarts water
1 onion, quartered
1 carrot, cut into large chunks
1 celery stalk, cut into large chunks
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon sugar
1 teaspoon salt
For the noodles and vegetables:
1 pound vermicelli noodles
1 cup bean sprouts
1 cup sliced cucumbers
1 cup diced tomatoes
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh basil
1/2 cup chopped fresh mint
1/2 cup chopped fresh Vietnamese coriander (if available)
For serving:
Lime wedges
Chilli sauce or chilli oil (optional)
Instructions:
1. To make the broth, combine the fish fillets, water, onion, carrot, celery, garlic, fish sauce, sugar, and salt in a large pot. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 30 minutes, or until the broth is flavorful.
2. Strain the broth through a fine-mesh sieve and discard the solids.
3. Bring the broth back to a boil and add the vermicelli noodles. Cook the noodles according to the package instructions, or until they are tender.
4. Meanwhile, heat a large skillet or wok over medium-high heat. Add the fish fillets and cook for 2-3 minutes on each side, or until they are golden brown and cooked through.
5. Divide the vermicelli noodles, bean sprouts, cucumbers, tomatoes, and herbs among bowls. Top with the fried fish fillets.
6. Ladle the hot broth over the top.
