Shrimp Rolls:

Ingredients:
4 cups of water.
1 cup of rice flour.
1 teaspoon of salt
We can choose these proteins for our rice rolls such as beef, pork, shrimp, or other protein of our choice. However, we chose shrimp for this video.
half a cup of finely chopped scallions.
1 tablespoon of vegetable oil.
half teaspoon of white pepper.
1 teaspoon of sesame oil.
Half a cup of Tapioca starch

Instructions:
In a mixing bowl, combine rice flour and tapioca starch. Slowly add water and mix until a smooth dough forms. Let the dough rest for 30 minutes.
In a separate mixing bowl, combine the cooked and peeled shrimp, soy sauce, sesame oil, sugar, and scallions. Mix well and set aside.
Roll the dough into small balls and flatten them into circles.
Place a spoonful of the shrimp mixture in the center of each circle.
Roll the dough around the filling, sealing the edges to form a cylinder shape.
Bring a pot of water to a boil and gently drop the rolls into the water. Cook for 2-3 minutes or until they float to the surface.
Remove the rolls from the water and place them on a plate.
Sprinkle sesame seeds on top of the rolls and serve with your favourite dipping sauce
Note: To make it look like traditional Chinese Dim Sum, you may want to shape them into an oval shape.

Spring Rolls:

Ingredients:
Half a cup of shredded cabbage
Half a cup of grated carrots
Half a cup of chopped scallions
Half a cup of chopped cilantro
Half a cup of cooked and shredded protein (such as chicken, pork, beef, or shrimp)
1 egg, beaten
Vegetable oil, for frying
Spring roll wrappers

Instructions:

1. Soak the spring roll wrappers in warm water for a few minutes to soften them.

2. In a bowl, combine the filling ingredients of your choice. You can add cooked shrimp or chicken if desired.

3. Place a wrapper on a flat surface and spoon a small amount of the filling mixture onto the wrapper.

4. Roll the wrapper up tightly, tucking in the sides as you go.

5. Heat oil in a deep pan or wok over medium-high heat. Carefully place the spring rolls in the hot oil and fry for about 2-3 minutes or until golden brown.

6. Remove the spring rolls from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.

7. Serve the spring rolls with a dipping sauce of your choice, such as sweet chilli sauce or soy sauce.

Note: that this is a basic recipe, you can add vegetables, herbs, and spices of your choice. You can also bake or steam the spring rolls instead of frying them.

The Third Dish:

Directions:

1. Soak rice paper wrappers in warm water for about 20-30 seconds or until they become pliable.
2. Place a wrapper on a flat surface and add a small amount of each ingredient in the center of the wrapper.
3. Roll the wrapper tightly around the filling, tucking in the sides as you go.
4. Repeat the process with the remaining wrappers and filling ingredients.
5. Serve the rolls with hoisin sauce.
Note: The ingredients can be varied depending on your preferences.
