Tamarind Pork Malaysian Style #porkrecipe

Tamarind Pork is a nice dish with a tangy, salty and yet sweet flavor at a the same time. Try this easy recipe and you'll be surprised how well balanced this flavor combo is.
Ingredients:
1shallot, sliced
3 garlic cloves, minced
1 lb pork shoulder, cut in desired pieces
2 cups chicken stock
1/2 cup light brown sugar
1 1/2 Tbsp tamarind paste
1 Tbsp soy sauce
1 tsp fish sauce
2 tsp shrimp paste
1 jalapeno

Heat 2 tablespoons of the oil in a large pot over medium heat. Add the shallots and garlic and cook until slightly softened, about 2 minutes.
Add the pork and cook on all sides until the outsides begin to brown.
Add the brown sugar, tamarind paste, soy sauce, fish sauce, and shrimp paste and give everything a quick stir.
Add the chicken stock and bring to a soft boil. Reduce the heat and simmer, cover with a lid for 45 to 50 minutes. When the pork is done simmering, transfer the meat and sauce to a serving bowl. Garnish with the chopped sliced jalapeños.
