Zoodles with Tofu Pesto (Serves 1)

Ingredients:

1 medium zucchini
1/4 teaspoon salt
50 grams tofu
1/2 large avocado
15 grams fresh basil leaves
20 grams walnuts
1-2 cloves garlic (to taste)
1/4 lemon (juiced)
1 tablespoon olive oil

Instructions:

Prepare the Zoodles:

Using a vegetable peeler or mandoline slicer, slice the zucchini into delicate ribbons or spiralize it into noodles. Be careful to stop peeling once you reach the seeds.

Make the Tofu Pesto:

In a food processor, combine the avocado, basil, walnuts, garlic, lemon juice, tofu, and olive oil. Blend until smooth and creamy. Adjust seasoning to taste.

Cook the Zoodles:

Heat a pan over medium heat. Sauté the zoodles for 3-5 minutes, just until they begin to soften. Be careful not to overcook; they should retain some texture.
Combine and Serve:

Remove the pan from the heat and gently mix the sautéed zoodles with the tofu pesto until well-coated.
Plate the zoodles, swirling them into an attractive presentation.
