Chicken Things! Baked, stuffed, bacon wrapped chicken!

Welcome back to the PharmCook kitchen! Today, we have a treat: Chicken Things! Thin sliced chicken stuffed with a cream cheese mix that includes diced pickled jalapeños, diced scallions, caramelized onions, and some rub that's then wrapped in bacon and baked in the oven. Delicious and low carb!

Ingredients:
Thin sliced chicken breast (I used Purdue) or boneless skinless chicken breast pounded very thin
1 eight ounce packet of cream cheese, softened
2 scallions, fine slice
pickled jalapeños (ended up being around 20 grams) diced fine
caramelized onion (~ 10 grams) diced
~2/3 tsp Kinders Wood Fired Garlic seasoning
pre-cooked bacon

Mix cream cheese with scallions, onions, jalapeños and seasoning until thoroughly incorporated.
Drop some of the cream cheese mix onto the chicken and roll the chicken around the cheese.
Wrap bacon around the chicken till most of the chicken is covered.
Pin bacon in place with toothpicks.

Place wrapped chicken on a rack and bake in the oven at 375 degrees until reaching an internal temperature of at least 165 degrees.

NOTE: Remove toothpicks before eating!

This dish is super easy and super tasty.
Even better, you can customize the seasoning of the cream cheese filling as you like!

Don't want to use jalapeños or caramelized onions in the cream cheese mix? No problem! Why not try diced chipotles? Or mix in some dill, garlic and lemon for a Mediterranean inspired version! It's up to you what seasonings you try. Let me know what flavor combinations you come up with!
