Ingredients:
2 cans beans (drained, reserve ½ cup of the bean liquid)
200g homemade sourdough bread (cut into bite-sized pieces)

Olive oil or butter (for toasting bread)
1 cup tahini
Juice of 1 lemon
1 cup yogurt
2-3 cloves garlic (minced)
1-2 tsp apple cider vinegar
Salt to taste
1 tsp cumin
Olive oil
Chili flakes (for garnish)
Fresh parsley (chopped, for garnish)

Instructions:

Prepare the Bread:

Cut the sourdough bread into bite-sized pieces.
In a pan, heat olive oil or butter.
Add the bread pieces and toast until crispy. You can add your favorite seasonings if you like.

In a pot, pour in ½ cup of the reserved bean liquid and bring it to a boil.

Make the Tahini-Bean Mixture:

In a large bowl, mash 1 can of the drained beans.
Add the tahini and boiling bean liquid, then mix well.
After mixing, add the lemon juice, yogurt, garlic, apple cider vinegar, salt, and cumin to the mashed beans.
Mix until the mixture is smooth and has a good, pureed texture.

Combine and Serve:

Gently fold in the remaining can of whole cannellini beans.
On a serving plate, create a layer of the crispy sourdough bread.
Spoon the tahini-bean mixture over the bread.
Drizzle with olive oil and sprinkle with chili flakes and chopped parsley.
Enjoy:

Serve immediately while the bread is still crispy, and enjoy this healthy and nutritious vegetarian dish!
