Sourdough Pide Recipe
ngredients:
For Activating the Sourdough Starter:
50 g sourdough starter
50 ml water
50 g flour

For the Pide:
100 ml activated sourdough starter (from above)
200 ml water
1 tablespoon Celtic salt
300 g white flour
Tomato puree (as needed)
2 eggs
Cheddar cheese, shredded (as needed)
1-2 jalapeño peppers, sliced into circles
A little extra flour for shaping
Parsley for garnish
Oil (for greasing the tray)
Additional salt (for sprinkling before baking)
Instructions:
Activate the Sourdough Starter (Morning):
In a bowl, mix together 50 g of mature sourdough starter, 50 ml of water, and 50 g of flour.
Cover the bowl with a cloth and let it sit at room temperature for a few hours until it’s bubbly and has risen.
Prepare the Dough:
Once the starter is active, in a large bowl, combine 100 ml of the activated sourdough starter, 200 ml of water, 1 tablespoon of Celtic salt, and 300 g of white flour.
Mix until you have a smooth and slightly sticky dough.
First Rise:
Cover the bowl with a clean cloth and let the dough rise for at least 1 hour at room temperature, until it increases in volume.
Prepare the Tray:
Take a baking tray and lightly oil the bottom to prevent the pides from sticking during baking.
Shape the Pide:
Lightly flour your work surface and turn out the dough.
Divide the dough into two equal portions.
Shape each portion into an oval or "boat" shape by flattening the dough and pinching the edges upwards to create a border.
Add Toppings in This Order:
Tomato Puree: Spread a thin layer of tomato puree in the center of each dough boat.
Cheddar Cheese: Sprinkle shredded cheddar cheese over the tomato puree.
Eggs: Crack two eggs on top of the cheese, spacing them out slightly.
Jalapeño Slices: Arrange the sliced jalapeño peppers on top of the eggs and cheese for a spicy kick.
Sprinkle Salt:
Lightly sprinkle some additional salt over the top of the pides before baking.
Bake:
Preheat your oven to 180°C (350°F).
Place the two pides on the oiled baking tray.
Bake for 10-15 minutes, or until the edges are golden brown, the egg is set, and the cheese is melted.
Garnish and Serve:
Remove from the oven and sprinkle with chopped parsley.
Serve warm and enjoy your delicious Sourdough Pide with layers of flavor and a spicy twist!
