Ingredients
For the Krumkake
3 large eggs
1 cup granulated sugar
1/2 cup unsalted butter, melted and cooled
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup whole milk
1/2 teaspoon ground cardamom (optional, for traditional flavor)
For the Whipped Cream Filling
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
Making the Krumkake
Preheat the Krumkake Iron: Heat the krumkake iron according to the manufacturer's instructions.
Prepare the Batter: In a large bowl, beat the eggs and sugar together until thick and pale. Gradually add the melted butter and vanilla extract, mixing well. In a separate bowl, sift together the flour and cardamom (if using). Add the dry ingredients to the wet mixture, alternating with the milk, and mix until smooth.
Cook the Krumkake: Lightly grease the krumkake iron. Spoon a small amount of batter (about a tablespoon) onto the center of the iron. Close the iron and cook for 30 seconds to 1 minute, or until the krumkake is golden brown. Remove the krumkake and immediately roll it around a wooden or metal cone form to shape. Allow it to cool and harden. Repeat with the remaining batter.
Making the Whipped Cream
Whip the Cream: In a large mixing bowl, beat the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract. Continue to beat until stiff peaks form.
Assembling the Whipped-Cream-Krumkake
Fill the Krumkake: Once the krumkake cookies have completely cooled, fill each one with a generous amount of whipped cream using a piping bag or spoon.

Tips
Krumkake Iron: If you don’t have a krumkake iron, you can use a pizzelle iron, though the pattern will be different.
