The Budapest Roll, also known as the "Budapest Cake" or "Budapest Bakelse," is a traditional Swedish pastry. Despite its name, it is not Hungarian but Swedish. This delightful treat is made of a meringue-based sponge filled with whipped cream and mandarins or other fruits. Here's a simple recipe to make a Budapest Roll at home: Ingredients For the Meringue: 6 large egg whites 1 1/2 cups granulated sugar 1 package (3.5 oz) vanilla pudding mix (instant) 1/2 cup finely ground hazelnuts or almonds For the Filling: 2 cups heavy whipping cream 2 tablespoons powdered sugar 1 teaspoon vanilla extract 1 can (11 oz) mandarin oranges, drained (or any other preferred fruit) Instructions Prepare the Meringue: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar, continuing to beat until stiff peaks form. Gently fold in the vanilla pudding mix and ground nuts until well incorporated. Spread the meringue mixture evenly on the prepared baking sheet. Bake the Meringue: Bake for 15-20 minutes, or until the meringue is set and lightly golden. Allow the meringue to cool completely on the baking sheet. Prepare the Filling: In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold in the drained mandarin oranges. Assemble the Roll: Carefully invert the cooled meringue onto a clean piece of parchment paper or a kitchen towel. Spread the whipped cream and fruit mixture evenly over the meringue. Using the parchment paper or towel to help, roll the meringue up tightly from one long side to the other, forming a log. Chill and Serve: Refrigerate the Budapest Roll for at least 1 hour before serving. Slice and serve chilled.
