For the Beans:

300g fava beans
Water (enough to cover the beans)
Salt (to taste)
For the Spicy Tomato Sauce:

30ml olive oil
1/2 red chili pepper
100g tomatoes
Juice of 1 lemon
3 cloves garlic, finely chopped
A bunch of parsley, chopped
For the Final Dish:

2 tbsp olive oil
1 onion, finely chopped
1 tsp cumin
2 cloves garlic, finely chopped
Salt (to taste)
Black pepper (to taste)
Reserved cooking water from the beans

Sprinkle with zaatar spice and olive oil
Instructions:

Cook the Fava Beans:

In a large pan, add the fava beans, enough water to cover them, and salt.
Cook until the beans are tender.
Prepare the Spicy Tomato Sauce:

In a Nutribullet or blender, combine olive oil, red chili pepper, tomatoes, and lemon juice. Blend until smooth.
Add the chopped garlic and parsley to the sauce. Set aside.
Combine Ingredients in the Pan:

In a separate pan, heat olive oil over medium heat.
Add the chopped onion and sauté until it becomes translucent.
Add cumin, finely chopped garlic, salt, and black pepper. Stir well.
Add the cooked fava beans to the pan.
Pour in some of the reserved cooking water from the beans. Mix and mash until the mixture reaches a puree-like consistency.
Serve:

Plate the fava bean mixture.
Top with the spicy tomato sauce and some freshly chopped tomatoes.
Serve with sourdough lavash bread sprinkled with zaatar spice and olive oil, if desired.
