Welcome back to Hamilton Homestead! Today, we’re whipping up a classic comfort food: Biscuits and Gravy—but with a healthier, homemade twist.

The secret to the best sausage gravy starts with making your own breakfast sausage. Commercial sausages are often overly salty, fatty, and filled with questionable bits, but homemade sausage is tender, flavorful, and completely customizable to your taste. It’s healthier, tastier, and surprisingly easy to make—no special tools required!

I’ll walk you through every step, from seasoning the ground pork for a perfectly balanced breakfast sausage to preparing the rich, creamy gravy and pairing it with warm biscuits. Oh, and you’ll get a sneak peek at my new kitchen too!

Breakfast Sausage
1 lb. Ground Pork
1 tsp Garlic Herb Salt
2 tsp Brown Sugar
½ tsp each: Coriander, Sage, and Thyme
¼ tsp each: Ginger, Nutmeg, and Pepper (I use white pepper)
Dash of Cayenne Pepper if you like a bit of heat.
1 ½ Tbls Powdered Milk
2-3 Tbls cold water

Sausage Gravy
1 lb Breakfast Sausage
¼ cup Butter
1/3 cup Flour
3 cups Milk
½ cup Cream
Salt & Pepper to taste

Biscuits
I used Pillsbury Grands Southern Homestyle biscuits – convenient, but they are generally considered unhealthy because they are high in saturated fat, calories, and sodium, with little nutritional value. Consumed in moderation (as in rarely), and as part of a balanced diet, I consider it an ok option. But definitely, go homemade with quality ingredients whenever possible.
