How to make Delicious Coffee Cake Muffins with Streusel

Wonderful Recipe to make Coffee Cake Muffins with Streusel inside and on top, great with a cup of Coffee or Tea.

Coffee Cake Muffins
Ingredients:

Streusel:
1/2 cup Flour
1/2 cup Brown Sugar
1/2 cup Sugar
1-1/2 tsp Cinnamon
Pinch of Salt
4 tbsp Butter, melted

Muffins:
2-1/4 cups Flour
1/4 tsp Salt
2 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Cinnamon
1/2 cup Butter, softened
3/4 cup Sugar
1/4 cup Brown Sugar
2 Eggs, room temp
1-1/2 tsp Vanilla
1 cup Sour Cream

12 - 6"x6" Parchment Paper Sheets
or
12 Muffin Liners
Cooking Spray
Muffin Pan

To make our own Muffin Cups.
Cut out 12 - 6"x6" Parchment Paper Sheets.
Fold each in a triangle from each side to find the middle.
Place them in the Muffin Pan, try to center it and form a cup.
Lightly spray each with the Cooking Spray.

Preheat Oven 375° F

To make the Streusel.
Combine Flour, Brown Sugar, Sugar, Cinnamon & Salt.
Add Butter and mix until it resembles wet Sand.
Refrigerate until ready to use.

To make Muffin Batter.
Combine Flour, Salt, Baking Soda, Baking Powder & Cinnamon, whisk well, set aside.
Cream together Butter, Sugar & Brown Sugar.
Add one Egg at a time and Vanilla.
Mix in Sour Cream.
Incorporate Flour Mixture in batches.
Divide half the Batter equally in Paper Cups.
Top each equally with half the Streusel Mixture.
Place rest of Batter equally on top.
Top with rest of Streusel Mixture, pressing down lightly.
Bake 22-24 Minutes or until tester comes out clean.
Rest 3 Minutes in Pan.
Serve warm or cool on Wire Rack.
