INGREDIENTS (serves 4) 🌱

1x cucumber
400g vegan yoghurt (I used @alpro greek style)
2x garlic cloves
Handful fresh mint (or 1tbsp dried)
1tbsp fresh/dried dill (optional)
1tsp red wine vinegar
1/2 lemon (optional)
Salt
2tbsp olive oil
1tsp smoked paprika
Flatbreads

METHOD 👨🏻‍🍳

1. Grate the cucumber, sprinkle over a large pinch of salt & squeeze out as much moisture as you can.

2. Crush the garlic, chop the mint & mix into the yoghurt with the cucumber.

3. Season with the vinegar, 1tbsp olive oil & leave to sit in fridge for as long as you can wait (it will taste better!)

4. To serve, drizzle over some more olive oil, sprinkle some smoked paprika & enjoy with flatbreads or dipper of choice!
