Who remembers the picnic bar? Crispy and chewy with lots of peanuts and raisins and smothered in chocolate. Well this is my vegan version.

They are also one of the easiest things to make. Only 5 ingredients and 3 easy steps.

✔️ You’ll want to save this one

1.25 cups of vegan dark chocolate (about 200g)
1/4 cup nut butter (60g)
1.75 cups puffed quinoa (45g)
1/2 cup salted peanuts (70g)
1/2 cup raisins (100g)

Optional extra drizzle of chocolate and nuts on the top

1️⃣ Put the quinoa on a baking tray and put in the oven for 5-6 mins to lightly toast (don’t skip this step as it makes the bars lovely and crunchy)
2️⃣ Melt the chocolate and stir through the nut butter and fully combine, then pour in the quinoa, peanuts and raisins and stir to mix in
3️⃣ Spoon the mix into an individual brownie tin and leave to set in the fridge for a couple of hours
