Creamy Spinach Chicken
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
4 cups fresh spinach, roughly chopped
Instructions
Prepare the Chicken:

Season the chicken breasts with salt and pepper on both sides.
In a large skillet over medium-high heat, heat the olive oil.
Add the chicken breasts and cook until golden brown on both sides and cooked through, about 6-7 minutes per side.
Remove the chicken from the skillet and set aside.
Make the Creamy Sauce:

In the same skillet, melt the butter.
Add the minced garlic and cook until fragrant, about 1 minute.
Stir in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Reduce the heat to medium and add the heavy cream, Parmesan cheese, and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
Add the Spinach:

Add the chopped spinach to the skillet.
Cook, stirring frequently, until the spinach is wilted and incorporated into the sauce.
Combine and Serve:

Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top.
Simmer for an additional 2-3 minutes to let the flavors meld together.
Serve the creamy spinach chicken over rice, pasta, or with crusty bread to soak up the delicious sauce.
