Sweet Pickle Relish

All the cucumbers we’ve had this year has meant lots of new things to try and can! So we decided to give this Sweet Pickle Relish a whirl, and I’ll tell you what, it’s amazing! We did a quadruple batch because we had soooo many cucumbers and this was not a flavor in our pantry. Recipe is for a single batch!

Sweet Pickle Relish
🥒 1 quart chopped cucumbers(about 4 medium)
🧅 2 cups onions, chopped
🫑 1 cup sweet green peppers
🫑 1 cup sweet red peppers
🧂 1/4 cup salt
🥒 3 1/2 cups sugar
🥒 1 tbsp celery seed
🥒 1 tbsp mustard seed
🥒 2 cups apple cider vinegar

Combine cucumbers, onions, green and red peppers in a large bowl; sprinkle with salt and cover with cold water. Let’s stand two hours. Drain; rinse and drain thoroughly. Combine sugar, spices and vinegar in a large sauce pot. Bring to a boil. Add drained, vegetable; simmer 10 minutes. Pack hot relish, hot jars, leaving quarter inch headspace. Remove air bubbles. Adjust two piece caps. Process 10 minutes in a boiling water canner for half pint jars, process 15 minutes for pint jars.
