Nomadic women in the Alborz Mountains lead a challenging yet fulfilling life. Their daily routine involves tending to livestock and processing milk to produce various dairy products. The process begins with milking the sheep and heating the milk. The warmed milk is then used to make yogurt and cheese, which are further churned to produce butter and buttermilk. To make cheese, buttermilk is heated, and yogurt is added. Once the buttermilk boils, a type of cheese suitable for winter storage is prepared. A special fermenting agent is added to the milk to aid in the cheese-making process. After boiling, the milk is cooled, the fermenting agent is added, and the mixture is left to set before being placed in a container to solidify. After making dairy products, the village women bake local bread and prepare a delightful afternoon meal using the dairy products.
