Vegan Musubi 🍘 with Mung bean “eggs” & Glazed Tofu “Spam”

I’m not sure whether musubi is Japanese or Hawaiian, or maybe both 🌺 but it’s the ultimate food on the go! Perfect for a power snack, or lunch box, or picnic etc 😋

Vegan or not, Spam is highly processed and preserved, it’s super high in fat and sodium and yet very low in actual nutrients including protein, minerals and vitamins 🫣 so ofc I opted for marinated tofu and also made the “eggs” out of mung beans - I recently made Tamagoyaki (Japanese omelet rolls) scroll down on my page to 6/27 🫶🏼

🍘TO MAKE:
2 cup cooked short grain white rice
2 nori sheet or more as needed

For the mung bean “eggs”
1 cup split mung bean, soaked overnight
1 1/2 tbsp tapioca flour
1 tsp Kala namak, aka black salt
1/2 tsp garlic powder
1/2 tsp turmeric
1 cup soy milk

For the tofu
12 oz extra firm tofu
1/4 cup vegan mushroom oyster sauce
1/8 cup soy sauce
1/8 cup coconut amino
1 tbsp brown sugar
