Hush puppies are a classic Southern dish made from deep-fried cornmeal batter. Here’s a basic recipe for making delicious hush puppies:

Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for a bit of heat)
1 small onion, finely chopped
1/2 cup buttermilk
1 egg
Vegetable oil (for frying)
Instructions
Mix Dry Ingredients: In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt, black pepper, and cayenne pepper (if using).

Add Onion: Stir in the chopped onion.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk and egg.

Mix Batter: Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but drop easily from a spoon. If it’s too thick, add a little more buttermilk.

Heat Oil: Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).

Fry Hush Puppies: Drop spoonfuls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.
