Zeppole Recipe
Ingredients:
1 cup water
1/2 cup unsalted butter
1/4 tsp salt
1 cup all-purpose flour
4 large eggs
1 tsp vanilla extract
1/4 cup granulated sugar
Powdered sugar, for dusting
Vegetable oil, for frying
Instructions:
Prepare the dough:

In a medium saucepan, combine the water, butter, and salt. Bring the mixture to a boil over medium heat.
Once boiling, add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
Remove the pan from the heat and let the dough cool for about 5 minutes.
Add the eggs:

Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy. This step can be done by hand or with an electric mixer.
Stir in the vanilla extract and granulated sugar until well combined.
Heat the oil:

In a deep fryer or a large, deep saucepan, heat about 2 inches of vegetable oil to 375°F (190°C).
Fry the zeppole:

Using a spoon or a piping bag with a large round tip, carefully drop small dollops of dough (about 1-2 tablespoons each) into the hot oil. Do not overcrowd the pan.
Fry the zeppole until they are golden brown and puffed, about 2-3 minutes per side. Use a slotted spoon to transfer them to a plate lined with paper towels to drain.
