15 MINUTES PASTA WITH PLANT BASED BACON

Protein per serve 40gr
Fibre per serve 15gr

Recipe:

INGREDIENTS (serves 2)
bacon:
6 Tbsp reduced sodium soy sauce
2 Tbsp maple syrup
2 Tbsp tomato paste
1 tsp smoked paprika
200gr seitan, cubed

Pasta:
Olive oil
½ carrot
½ red onion
½ celery
200gr cherry tomatoes, halved
2 tsp capers
Small handful basil leaves
100 gr cooked chickpeas
180-200 gr mafalde corte pasta, or any pasta shape you like

METHOD:
In a bowl combine the seitan marinade and once well mixed add the cubed seitan. Set aside to marinade
Place carrot, onion and celery in a food processor and blitz blend until finely chopped. Alternatively dice the veggies with a knife
Heat a good glug of olive oil in a pan and add the veggies. Sautè over medium heat until the veggies are soft and the onion is translucent.
Lower the heat and add the capers, the halved tomatoes and the basil. Let it cook until the tomatoes are soft but still have a nice crunch to them.
While the tomatoes soften, cook the bacon. Heat a glug of oil over medium heat in a separate pan and add the bacon. Let it cook for 6-8 minutes until golden brown. Before it starts burning you might want to reduce the heat to low.
Cook the pasta according to package instructions
Combine everything together and serve.
