Here's a simple and delicious one-pot beef stroganoff recipe:

One-Pot Beef Stroganoff
Ingredients:

2 tablespoons olive oil
1 pound beef sirloin, thinly sliced into strips
Salt and pepper to taste
1 medium onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
2 tablespoons all-purpose flour
4 cups beef broth
1 cup heavy cream
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
8 ounces egg noodles
1/2 cup sour cream
Fresh parsley, chopped (for garnish)
Instructions:

Brown the Beef: Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the beef strips with salt and pepper. Add the beef to the pot and cook until browned on all sides. Remove the beef from the pot and set aside.

Sauté the Vegetables: In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are tender, about 5 minutes.

Make the Sauce: Sprinkle the flour over the vegetables and stir to coat. Gradually add the beef broth, stirring constantly to prevent lumps. Bring to a simmer and cook until the sauce starts to thicken, about 5 minutes.

Add the Noodles and Beef: Stir in the heavy cream, Worcestershire sauce, and Dijon mustard. Add the egg noodles and return the browned beef to the pot. Bring to a simmer, then cover and cook for about 10-12 minutes, or until the noodles are tender and the beef is cooked through.

Finish the Dish: Remove the pot from heat and stir in the sour cream until well combined. Taste and adjust seasoning with salt and pepper if needed.

Serve: Garnish with chopped fresh parsley and serve hot.
