The Blue Mac Cheese Spud!
Talk about Incredible! This is easily my favorite Baked Potato!
Don't like Blue Cheese? Don't add it, this will be a fan favorite for whomever you make this for.
Recipe:
Ingredients
1 1lb Box of Shell Noodle (or your choice)
2 tablespoons of Butter, 2 tablespoons of Flour for roux.
2 Cups of Chicken Stock
1 tablespoons of Chicken Bouillon
1/2 tablespoons of garlic powder
1/2 tablespoons of onion powder
1/2 tablespoons of Paprika
1/2 Block of cream cheese
Optional - (1/2cup of Blue Cheese)
1/2 lb block of Colby jack cheese
S&P to taste
Yields 4 Baked Potatoes
In large pot boil water for Noodles (Salt the water if you'd like)
I Microwaved 2 washed skin on Large Russet Potatoes for 12 minutes covered with damp paper towel and microwave cover
(once my water was boiling.)
Start the noodles, mine took about 12 minutes.
While Noodle and Potatoes are cooking
in medium sauce pan over medium/medium high heat add 2 tablespoons of butter
when butter is melted, add 2 tablespoons of flour to make the roux.
I like this almost peanut butter in color, you can smell the flour cooking out and the scent becomes
nutty. You can stop at blonde roux if you'd like
Once the color is achieved, add 2 cups of chicken stock, whisking until the roux is fully dissolved.
I did this off the heat, once full mixed place back on low/medium heat.
Then add 1 tablespoons of Chicken Bouillon
1/2 tablespoons of garlic powder
1/2 tablespoons of onion powder
1/2 tablespoons of Paprika
After whisked well
add half block of cream cheese & Blue cheese crumble whisk over heat until smooth
then 2 cups of shredded Colby Jack cheese and whisk over heat until liquid golden cheese sauce
Mix noodles into sauce.
Then place a potato on a plate, slice in the middle not all the way in half. We want the potato to hold the toppings up. Press the ends down after slice, run a knife on the inner sides of the potato
Add 2 slice of butter, a little shredded Colby Jack, then the Mac & Cheese.
Add some more Colby Jack, Optional - (Add some Blue Cheese Crumble) and Enjoy!
The 2nd one I added Ranch and Parmesan as well after the Blue Cheese and it was truly Incredible!
