INGREDIENTS:
1 kg Mutton (shanks & mix cut)
Half cup Oil
Half cup ghee
2 Medium Onions chopped
1 tablespoons Ginger garlic( freshly crushed for a better flavour)
1 tsp Kashmiri red Chili
1 tsp Red chili
1/4 tsp Turmeric
1 tspCoriander Powder
1 tsp Cumin
1 tsp Salt
4 tbsp Yogurt

Special Masala:
half tsp Cumin
1 tsp Garam masala
3-4 Cardamom
1 small Star anise( badian)
Small piece of Jaifal & javetri
Crush all these spices together and its ready.

METHOD:
In a pot/instant pot add oil, ghee , mutton, saute for 6-7 minutes until color changes, add onion and all the mentioned spices( except special masala) pressure cook
for 30 minutes. Uncover and let the water dry out for 10 minutes at medium heat. Add yogurt, and special masala at the end. Cook for another 10-12 minutes until oil separates. Garnish with ginger and some crushed cumin. Enjoy with naan or roti.

You can cook in regular pot too, just cover and cook the meat for about an hour until its soft and tender, follow the recipe as it is.
