How to Make Homemade Rock Candy: Step-by-Step Recipe

6 cups extra fine granulated sugar

Instructions
Prepare the Sugar Syrup
Mix Water and Sugar: In a large pan over medium-high heat, combine 2 cups of water and 6 cups of extra fine granulated sugar. Stir until the sugar completely dissolves.
Add Color (Optional): If you want colored rock candy, add food coloring to the sugar syrup now.
Boil the Mixture: Bring the sugar syrup to a full boil, stirring frequently.
Cool a Portion of Syrup: Turn off the heat and ladle ½ cup of the syrup into a large coffee mug. Set this aside to cool.
Cover and Cool: Leave the rest of the syrup in the pan, cover it with plastic wrap, and let it cool overnight.
Prepare the Skewers
Sugar Plate: Spread ¼ cup of granulated sugar onto a small plate.
Coat the Skewers: Dip one end of each skewer into the cooled ½ cup reserved syrup, then roll the dipped end in the granulated sugar.
Dry the Skewers: Place the sugar-coated skewers on a baking sheet lined with plastic wrap. Let them dry overnight.
Set Up for Crystal Formation
Foam Block: Stick the un-dipped end of each skewer into a foam block, spacing them about 1 inch apart.
Place in Syrup: Position the skewers upside down into the pan with the sugar syrup. Ensure the sugar-coated ends are dipped in the syrup but not touching the bottom or sides of the pan.
Crystal Growth: Allow the skewers to rest undisturbed for 7 days. Do not move the pan during this time to let the crystals form and grow.
Finish the Rock Candy
Remove the Skewers: On the 7th day, carefully take the skewers out of the pan. You might need to gently wiggle them to release from the hardened syrup.
Dry the Rock Candy: Place the skewers on wax paper, plastic wrap, or parchment paper to dry for one day. Turn them every few hours to ensure all sides dry completely.
Wrap for Storage: Once dried, wrap the rock candy in plastic wrap for storage.
