SAUSAGE & SPINACH QUICHE
1 unbaked pie crust, deep dish
8 oz sausage, cooked and drained
2 cups fresh spinach, roughly chopped
1/2 cup shredded cheddar cheese
6 large eggs, room temperature
1/2 cup heavy cream
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper

Directions
Pre-bake the pie crust by blind baking by place parchment paper in the crust and cover the bottom with 1 lb dry beans.
Bake 400* 10 - 12 minutes
Remove from oven and allow to cool to room temperature.

Cook and drain and cool sausage -
To Bake in the Oven - 350* 40 minutes (30 minutes in chop sausage)
Drain and let cool.

In a medium bowl beat the eggs,
Add heavy cream, milk, salt and pepper.

Layer the quiche as follows -
1/2 of the spinach
1/2 of the sausage
1/2 of the cheese
Repeat the layers in the same order
Pour the egg mixture over the quiche.

Place the quiche on a baking sheet if desired
Bake on 350* for 45-55 minutes or until the center is set.
Let rest for 20 minutes before serving.
