INGREDIENTS:
700gms beef boneless (or chicken/mutton)
1 tsp salt
1 tsp chili flakes
1 tsp cumin
1 tsp coriander powder
half tsp red chili powder
1 tsp garlic powder
1 pack Biryani masala(bombay biryani from Shan)
1 small lemon chopped
2 tbsp mint
3-4 green chilies
1 cup yogurt
5-6 dry plums( aloo bukhara)
2 tbsp imli pulp (or chutney)
2 tbsp gingergarlic paste
Half cup fried onion(homemade or store bought)
3 medium tomatoes chopped

`For Rice
3 cardamom (elaichi)
2 black cardamom (bari elaichi)
1 bay leaf (tez pat)
8-10 black pepper whole
2 star anise( badian)
1 tbsp cumin seeds
1 stick cinnamon
2 tbsp mint leaves
P1 dry lemon whole(or regular lemon slices)
1 tsp salt
2 tbsp vinegar
3 cups Basmati rice(washed and then soaked in water for 30 min)
3 litres water

Method:
In a pot, add water, all the mentioned ingredients for boiling rice, bring it to a boil, then add rice. Boil for 14 minutes, check the rice, they shouldn't be very soft and mushy(cook 90%) Remove and strain water. Set aside.
For meat masala, In a dish, add meat, along with all the spices, lemon mint,green chilies yogurt, plum, tamarind, ginger garlic paste, fried onions, tomatoes, mix well. In a regular pot or instant pot/pressure cooker, take oil, add meat mixture. For instant pot/pressure cooker cook for 25 minutes, for regular pot cover and cook for 50 minutes until meat is soft and oil separates
Now layer the biryani. Add rice, then a layer of meat masala, add mint, then another layer of rice, Garnish with tomatoes, lemon, chillies, fried onion, and orange/red food color. Put on dam for 15 minutes. And its ready Enjoyyyys
