Matt Hussey's Tenderloin Breakfast Sandwich | Blackstone Griddles

Ingredients
½ lb pork loin (2 slices, ¼ pound each)
1 cup all-purpose flour
1 tablespoon Blackstone Essentials seasoning or S.P.G.
½ teaspoon garlic powder
1 cup buttermilk
½ cup cooking oil
2 eggs
1 tablespoon butter
¼ cup mayonnaise
2 slices American cheese
4 slices thick bread (like Texas toast)
Items Needed
Gallon bag
Meat mallet
Breading station or multiple bowls/plates
Directions
1. Preheat your Blackstone griddle to low and add oil.
2. Place pork loin slices in a gallon bag and pound thinly with a meat mallet.
3. In a bowl, mix the flour, Blackstone seasoning, and garlic powder.
4. Pour buttermilk into a separate container.
5. Bread the pork slices by dipping them in the flour mixture, then the buttermilk, and then back into the flour mixture. Lay the breaded pork in the hot oil.
6. Cook the pork until done.
7. Meanwhile, cook the eggs and toast the bread.
8. Add butter to the griddle and crack the eggs. Cook until slightly done, leaving a little softness (or to your liking).
9. Add the bread to the griddle to toast.
10. Assemble the sandwich: spread mayonnaise on the toasted bread, add the pork, then the egg, and finally the cheese. Top with another slice of toast.
11. Enjoy!
