🍄 MUSHROOM SHAWARMA 🌯@fitgreenmind

everyone loves shawarma, but did you know you could make your own at home… not with meat, but with MUSHROOMS 🤯

@fitgreenmind and I met up + made this UNBELIEVABLE shawarma (OUR WAY) using oyster mushrooms 🍄

we served the shawarma pieces in a wrap with tzatziki, salad, tahini + more - but you can use whichever fillings you like!

INGREDIENTS (serves 4)

SHAWARMA

600g oyster mushrooms
1 tbsp each: garlic granules, ground cumin, smoked paprika, dried oregano, onion powder
1 tbsp ground coriander
1 tsp cinnamon
1 lemon
2 tbsp maple / agave syrup
4 tbsp olive oil (use as needed)
Salt
Pepper

TO SERVE: sliced tomato, cucumber, red onion, fresh parlsey, tahini + tzatziki

METHOD

⁠1. Sear the mushrooms in a hot pan by weighing them down with something heavy.
2. Sprinkle on both sides with some of the spice mix + keep searing until golden-brown (several mins each side).
3. Mix the rest of the spice mix with the oil + lemon juice, then coat the mushrooms well.
4. Put them on skewers to create your shawarma (an onion base helps with stabilising it).
5. Roast at 200C/400F for 30 minutes, brushing every now and then with more marinade.
6. Slice the shawarma, then prepare your salad + sauces of choice.
7. Warm your wraps, assemble, then enjoy!
