UMAMI ACCORDION TOFU🔥by @vegscratchkitchen

ingredients

1 block extra firm tofu, drained, dried, and pressed
skewers
oil, salt, & pepper as needed
1/4 cup maple syrup
6 tbsp soy sauce
4 tbsp rice vinegar
3 tbsp sriracha
1 heaping tbsp vegan oyster sauce
1 heaping tbsp grated garlic
1 heaping tbsp grated ginger
cooked rice for serving
fresno chili, scallion, cilantro, and sesame seeds for topping

prep

cut your tofu block lengthwise with your knife edge parallel to the cutting block. this leaves slab of tofu that is about 1 inch thick. find a pair of 1/2-inch straws, chop sticks, or other long cylindrical object to use for making the accordion cut. lay the tofu slab on your cutting block and place the cylindrical objects on either side. cut on a diagonal every 1/4th inch until your knife stops on the cylindrical objects. flip the tofu and then cut directly across every 1/4th inch. thread 2-4 skewers through each prepared tofu slab.

combine maple syrup, soy sauce, rice vinegar, sriracha, oyster sauce, garlic, and ginger and whisk together.

heat a griddle or cast iron pan over medium-high heat and allow to pre-heat 2-3 mins. add 3-4 tbsp neutral cooking oil to the pan, then add your tofu slabs. drizzle a little more oil over each tofu slab and season with salt and pepper to taste. sear 3-4 mins. flip tofu, then pour half the umami sauce over the top to completely coat each slab. allow to sear another 3-4 mins. flip again and add more sauce. continue searing each side until desired char/crisp.

place tofu over rice, remove skewers, then top with frenso chili, scallion, cilantro, and sesame seed. add some of the reserved sauce at the end if you’d like. dig in, and enjoy 🙏
