Mango Bango 🥭

This Filipino dessert is one of my favourite things to make in the summer - it’s so refreshing and delicious! It’s also the perfect dessert for summer BBQs or parties because you can make it the night before and leave it in the fridge - it also requires minimal cooking (just the sago)

1 cup mini tapioca pearls (sago) - add to a pan of boiling water and simmer for 12 mins; cover with a lid for 10-15 mins until completely transparent; drain the sago and rinse well with cold water; keep the sago submerged in cold water until ready to use

4 mangoes
1 jar drained coconut jelly
1 tin evaporated milk (400ml)
1 tin coconut milk (400ml)
2/3 tin condensed milk

Refrigerate overnight and serve chilled - enjoy!
