Chicken Breast with Mozzarella, Pesto and Tomato confit
1:) In a baking dish, add 10-12 tomatoes, 2-3 cloves garlic crushed, 3 tbsp olive oil , sprig of rosemary or thyme. Mix and Bake at 200/c for 25-30 mins until the tomatoes are wrinkly but not all have burst.
2:) Using a rolling pin or meat mallet, pound 250 grams of chicken to the same thickness.
3:) In a bowl, add 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp crushed black pepper, 1 tsp red chilli flakes, 1 tbsp lemon juice and 1/2 tsp salt or to taste. Mix everything. Add the chicken pieces and massage them with the marinade for about 30 seconds.
4:) Heat a heavy duty grill pan to high heat for about 2-3 minutes. Lower the heat to medium-high and add the oil to the pan and make sure the entire pan is coated with oil.
Add the chicken breasts to pan and cook for 4-5 minutes on the first side. Flip the chicken breasts using a pair of tongs or a fork and cook the other side for 4-5 minutes or until the inner temperature reaches 73/c.
5:) Switch off the gas. Place slices or mozzarella cheese on top.
6:) Remove the chicken and place it on the serving plate. Drizzle around 1-2 tbsp of pesto sauce and add the tomato confit on the top. Serve hot!
