Recipe for practicing flowers with EGG WHITES cream:

✅ 125g egg whites
✅ 325g sugar
✅ 90 g hot water
✅ 1g citric acid
✅ Syrup/vanilla to taste (if using for cake decoration, not just practice)

Whip egg whites until soft peaks form. In a saucepan, pour hot water and carefully add sugar. Place the saucepan over medium heat and cook the syrup until it reaches 123 degrees Celsius(253 F)
During cooking, do not stir the syrup to avoid crystallization.
Add citric acid, stir.

Pour the syrup into the egg whites in a thin stream and continue whipping until the icing starts pulling away from the sides (forming “caves”) and wrapping around the whisk.
I added a bit of caramel syrup at the end.
The icing is ready! 😌

Now you can practice your flowers have no rush, because this cream wouldn’t set it has no agar agar.
